Sweet Veg Baked Oats

Serves: 2 people

Ingredients:

Baked Oats

●      1 small ripe bananas

●      1.5 Tbsp maple syrup

●      1 cups quick oats

●      1 scoops plant-based protein powder (optional)

●      0.5 tsp baking powder

●      1 cup unsweetened plant milk (soy, oat, almond)

●      1 Tbsp Nutri V Sweet Veg Powder

 Frosting

●      ¼ cup coconut yoghurt

●      Chopped walnuts

●      Sprinkle of sweet veg powder & shredded coconut

You will also need:

  • 1x medium sized mixing bowl

Method:

  1. In a bowl, mash 1 small banana with 1.5 Tbsp maple syrup and 1 cup plant milk. Stir in 1 cup quick oats, 1 scoop protein powder (optional), ½ tsp baking powder, and 1 Tbsp sweet veg powder until combined.

  2. Pour into a greased oven-safe dish or ramekin.

  3. Oven: 175°C for 20–25 min or Air fryer: 160°C for 12–15 min

  4. Check with a toothpick; it should come out mostly clean.

  5. Top & Serve: Let cool slightly, then add ¼ cup coconut yoghurt, chopped walnuts, cinnamon, and shredded coconut.
