Pumpkin Spiced Baked Oats

Serves: 1-2 people

Cook Time: 25 minutes


Ingredients:

  • 1 cup quick oats

  • 1 tsp baking powder

  • 1 tsp cinnamon

  • ½ tsp nutmeg

  • ¼ tsp ginger

  • Pinch of salt

  • 2 tbsp Nutri V Pumpkin Powder

  • 1 tbsp chia seeds (or flaxseed meal)

  • 1 cup plant-based milk (oat, almond, soy)

  • 1 mashed banana

  • 2 tbsp maple syrup

  • 1 tsp vanilla extract

Frosting

  • ¼ cup coconut yoghurt

  • Chopped walnuts

  • Sprinkle of pumpkin powder & shredded coconut

Method:

  1. In a bowl, mix oats, baking powder, spices, salt, pumpkin powder and chia seeds.

  2. In another bowl, whisk plant milk, mashed banana maple syrup and vanilla.

  3. Combine wet and dry ingredients and mix well.

  4. Pour into a lined baking dish and top with extras if using.

  5. Bake in the Oven: 175°C (350°F) for 20–25 min or Air fryer: 160°C (320°F) for 12–15 min

  6. Allow to cool slightly before serving.

  7. Let cool slightly, then add ¼ cup coconut yoghurt, chopped walnuts, cinnamon, and shredded coconut.
