NEW!! Creamy Broccoli Alfredo Pasta

Ingredients:
For the pasta
375g pasta of choice
1½ Tbsp olive oil
Juice of ¾ lemon
Salt + pepper, to taste
For the Broccoli Alfredo Sauce
1⅛ cups (180g) raw cashews (soaked 15–30 mins in hot water)
1½ cups unsweetened plant milk
3 Tbsp nutritional yeast
2 tbsp Nutri V Broccoli Powder
1½ Tbsp lemon juice
1–2 small garlic cloves (adjust to taste)
¾ tsp onion powder
Pinch of sea salt
You will also need:
1x Blender
Method:
Cook the pasta according to packet instructions. Drain, reserving ½ cup of pasta water.
Make the sauce: Add soaked cashews, plant milk, nutritional yeast, broccoli powder, lemon juice, garlic, onion powder, salt, and oil (if using) to a blender. Blend until completely smooth and creamy.
Toss pasta through sauce until well coated. Finish with a squeeze of lemon and cracked pepper.
Optionally top with some fresh parsley, vegan parmesan, or toasted breadcrumbs.
