NEW!! Creamy Broccoli Alfredo Pasta

Ingredients:

For the pasta

  • 375g pasta of choice

  • 1½ Tbsp olive oil

  • Juice of ¾ lemon

  • Salt + pepper, to taste

For the Broccoli Alfredo Sauce

  • 1⅛ cups (180g) raw cashews (soaked 15–30 mins in hot water)

  • 1½ cups unsweetened plant milk

  • 3 Tbsp nutritional yeast

  • 2 tbsp Nutri V Broccoli Powder

  • 1½ Tbsp lemon juice

  • 1–2 small garlic cloves (adjust to taste)

  • ¾ tsp onion powder

  • Pinch of sea salt

You will also need:

  • 1x Blender

Method:

  • Cook the pasta according to packet instructions. Drain, reserving ½ cup of pasta water.

  • Make the sauce: Add soaked cashews, plant milk, nutritional yeast, broccoli powder, lemon juice, garlic, onion powder, salt, and oil (if using) to a blender. Blend until completely smooth and creamy.

  • Toss pasta through sauce until well coated. Finish with a squeeze of lemon and cracked pepper.

  • Optionally top with some fresh parsley, vegan parmesan, or toasted breadcrumbs.
