Creamy Tomato Gnocchi Bake

Serves: 4 people

Prep Time: 10 minutes

Cook Time: 40 minutes


Ingredients:

  • 500g gnocchi

  • 1 tbsp olive oil

  • 3 cloves garlic, minced

  • 1 small onion, finely diced

  • 1 cup cherry tomatoes

  • 1 jar (500g) tomato arabiata pasta sauce

  • 2 heaped Tbsp Nutri V Mixed Veg Powder

  • ½ tsp salt (adjust to taste)

  • 2 cups spinach

  • Black pepper, to taste

  • ½ cup cheese

  • Optional: handful of basil

Method:

  1. Preheat oven to 180°C.

  2. Heat olive oil in a pan, sauté onion and garlic until soft and fragrant.

  3. Stir in the cherry tomatoes and continue cooking until they blister. 

  4. Then add the tomato sauce and Nutri V Mixed Veg Powder. Mix well until smooth.

  5. Season with salt and pepper, then fold through gnocchi and spinach.

  6. Pour into a baking dish, top with cheese.

  7. Bake for 20–25 minutes until bubbly and golden on top.

  8. Finish with fresh basil if you have it, salt and pepper!
