Creamy Tomato Gnocchi Bake
Serves: 4 people
Prep Time: 10 minutes
Cook Time: 40 minutes
Ingredients:
500g gnocchi
1 tbsp olive oil
3 cloves garlic, minced
1 small onion, finely diced
1 cup cherry tomatoes
1 jar (500g) tomato arabiata pasta sauce
2 heaped Tbsp Nutri V Mixed Veg Powder
½ tsp salt (adjust to taste)
2 cups spinach
Black pepper, to taste
½ cup cheese
Optional: handful of basil
Method:
Preheat oven to 180°C.
Heat olive oil in a pan, sauté onion and garlic until soft and fragrant.
Stir in the cherry tomatoes and continue cooking until they blister.
Then add the tomato sauce and Nutri V Mixed Veg Powder. Mix well until smooth.
Season with salt and pepper, then fold through gnocchi and spinach.
Pour into a baking dish, top with cheese.
Bake for 20–25 minutes until bubbly and golden on top.
Finish with fresh basil if you have it, salt and pepper!
