Sandy’s Potato Rosti Bites

Serves: 15 - 20 rosti’s

Prep time: 15 minutes

Cooking time: 20 minutes


Ingredients:

  • 8 medium potatoes

  • 21g (3 tbsp) mixed veg, broccoli or pumpkin powder

  • 100g panko breadcrumbs

  • 1 Cup shredded cheddar

  • 100g parmesan cheese

  • 2 eggs

  • 6 rashers short bacon  

  • Olive oil

  • Salt & pepper

You will also need:

  • Mixing Bowl

Method:

  1. Preheat Oven to 180 degrees.

  2. Chop bacon into small pieces. Lightly oil your fry pan and sauté bacon then put aside to cool.

  3. Wash, peel and cut your potato into small cubes. Put into a put of cold water, bring to the boil and then simmer for 10 minutes. Drain, set aside to cool.

  4. Roughly smash the potatoes, leaving slightly chunky and add to mixing bowl. Add both cheeses, eggs, and some salt & pepper. Mix well together. Stir in bacon. Mix in breadcrumbs and vegetable powder.

  5. Roll the mix into your preferred bite size shape. We rolled into a long roll then cut into discs.

  6. Place bites onto baking paper, drizzle with olive oil and put in the oven for 20 minutes or until golden.

  7. Serve with some fresh herbs or enjoy as is!
