Serves: 4-6

Cooking time: 15 minutes


Ingredients:

Pastry

  • 3 sheets puff pastry

  • 1 egg

  • Sesame seeds & poppyseeds

Filling

  • 500g extra lean beef mince

  • 2-3 tbsp Nutri V Pumpkin powder

  • 1 bunch coriander, chopped

  • 1 egg

  • 2 1/2 tbsp massaman curry paste

  • Juice 1 lime

  • 1 tbsp brown sugar

  • 1 tbsp fish sauce

  • 1 tsp minced ginger

  • 1 tsp minced garlic

You will also need:

  • 1x medium sized mixing bowl

  • 1x small bowl

Method:

  1. Preheat oven to 180 degrees, fan plus

  2. In a medium size bowl, add all filling ingredients and mix well

  3. In a separate small bowl, crack and whisk one egg

  4. Slice a thawed puff pastry sheet in half. Place filling down the middle leaving room on the long edge. Brush egg wash onto one side of the pastry. Fold one long edge onto the other side to close the filling in the puff pastry and press down to seal or seal with the edge of a fork. Repeat process until all filling is used up.

  5. Cut long strip of sausage roll into small bite sizes. Brush more egg wash on each one and sprinkle with sesame seeds and or poppyseeds

  6. Bake in the oven for 20-25 minutes or until golden brown

  7. Serve with dipping sauce of choice!
